Today I'm posting Zarda recipe. Zarda is sweet orange colored rice. Its a very popular punjabi dessert. My mom makes the best Zarda ever and I grew up eating the yummiest zarda every couple of weeks :)
Yesterday was my father's death anniversary and i made it for "Fatiha" (we pray for the departed soul with something that he/she used to like).
Here's the easiest and yummiest recipe for zarda. I hope you would like to give it a try.
Zarda
Rice: 2 cups
Orange color: 1 tsp
Sugar: 1 cup
Oil: 3 tbsp
Milk: 1/2 cup
Cardamom Powder: 1 tsp
Almonds, Pistachios and any other nuts of your choice: 1/4 cups
Boil rice with orange color till they are still hard ( 2 kanni). take out water and let them sit in a sieve so that all the water is gone. In another pan, heat oil and add cardamom, when it starts to smell, add sugar and milk and cook until it forms a nice starchy consistency. Add rice and nuts. Mix well. Cover and keep on the slowest heat for 15 minutes. Yummiest Zarda is ready to serve.

Chicken Stick Boti
Chicken stick boti is like a mini seekh kabob but the taste and texture is very different and unique. It is finger licking recipe and once you make it and taste it, only then you know what you were missing… :)Here's the recipe;
Ingredients:
1 Chicken breast (cut into very small pieces)
Chicken tikka masala 1-2 tsp
Oil 1 tablespoon
Crushed red chillies 1/2 tsp
Salt to taste
whole cumin seeds 1 teaspoon
Crushed whole coriander seed 1/2 tsp
Green chillies crushed 1-2
Tooth picks 24-30
Bread crumbs 1/2 cup
Egg 1
Corn flour 1tbsp
Method:
Marinate chicken in all the spices and oil (other than bread crumbs, egg and corn starch) for 2-3 hours. Put the chicken on toothpicks, three pieces on one pick. Roll in Bread crumbs and press with hands. Beat egg with corn flour. Put egg mix on the bread crumbs rolled chicken sticks with your hands, make sure you do not put a lot and fry till golden. Serve with mint and tamarind sauce.
